Nicole

Owner / Wine Director

An attorney, business executive, and entrepreneur, Nicole has spent more than 25 years helping businesses grow, evolve, and succeed. She currently serves as Chief Legal Officer and is the founder of a boutique law firm advising healthcare and private equity-backed businesses.

Throughout her career, Nicole has held leadership positions spanning legal affairs, franchise operations, human resources, and risk management. She holds a Juris Doctor and Master of Business Administration from Stetson University and a bachelor's degree from Florida State University.

But beyond the boardroom, Nicole has cultivated an equally enduring passion for wine.

An avid collector with a personal cellar of more than 1,200 bottles, Nicole has spent years exploring wine regions, visiting vineyards, meeting winemakers, and discovering the stories that make each bottle unique. Her wine education includes WSET certification, but much of her appreciation comes from firsthand experiences and a curiosity that continues to grow with every new region and producer she encounters.

Nicole is particularly drawn to small, independent producers, lesser-known varietals, and wines that reflect the character of the land and the people behind them. She believes some of the most memorable wines are not necessarily the most expensive or recognizable, but the ones that surprise you, spark a conversation, or introduce you to something entirely unexpected.

After making Park City home via Florida, Nicole saw an opportunity to create the kind of wine bar she and Aaron had always loved discovering during their travels: a place with an exceptional wine selection, thoughtful food, and an atmosphere that feels sophisticated without being pretentious.

At its heart, Tannin Bar reflects Nicole's belief that great wine should be accessible, adventurous, and above all, enjoyable. Whether guests are discovering an unfamiliar grape, exploring a new region, sharing a beautiful bottle of Champagne, or simply meeting friends for a glass after a long day, she wants the experience to feel welcoming and unhurried.

Her hope is that Tannin Bar is more than a place to drink wine. It becomes a gathering place for the community, where curiosity is encouraged, hospitality feels personal, and everyone leaves looking forward to their next visit.

When not working, Nicole enjoys camping, hiking, skiing, paddle boarding and of course wine tasting!
